Indian spices (or masala) are often used in dishes in their powdered form but there are certain dishes that are cooked by simple throwing in the spices as a whole without powdering or crushing. These kind of spices are known as khada masala (whole spice).
The chicken khada masala is a healthy chicken stew cooked in whole spices (khada masala). It is an easy preparation and makes for a wonderful weekend lunch alongside some pulao or parathas.

Ingredients
- 600g Chicken
- 5tbsp Oil
- 3-4 whole red chilies
- 3 bay leaves
- 2piece cinnamon
- 4 black cardamoms
- 7-10 Pepper Corns
- 5-6 Cloves
- 1 javitri flower
- 4cups onionchopped
- 2piece Gingercoarsely ground
- 10-15cloves garliccoarsely ground
- 6tbsp curd
- salt to taste
- tsp ½red chili powder
- tsp ½turmeric powder
Instructions
- Heat oil in a pan.
- Add bay leaves and whole red chilies.
- Crush cinnamon, black cardamoms, black peppercorn, cloves and javitri and add these to the oil.
- Fry for a few seconds.
- Add onions and sauté for 3 minutess.
- Add ginger and garlic paste and sauté for another 3 minutes.
- Add chicken, curd, turmeric powder, red chili powder and salt.
- Add 3 tablespoons of water.
- Simmer the heat.
- Cover and cook till oil separates from the masala on low heat, about 45-60 minutes.
- Stir occasionally.
- Add little water and cook till chicken is soft and cooked.
- Garnish with coriander leaves.
- Serve hot with chapatis or rice.
